In the Kitchen with Vanessa Liebe- Recipe for Chicken Enchiladas
One of my favourite meals is enchiladas. It’s so versatile for any number of guests- just increase the ingredients accordingly.
Serves 4-6 people
3 chicken breasts
Tin of chopped tomatoes
Two green or red peppers or one of each
About ten fine green beans
Packet of medium chilli seasoning or heat level of choice.
12 or more large flour wraps
Tub of creme fraiche
Grated cheese (optional)
Chop the chicken into small chunks and fry in a wok
Once the chicken is cooked, add the powdered chilli and seasoning. Stir in.
Empty the can of chopped tomatoes in stir on a low heat
Add chopped beans and peppers and stir
Add the grated cheese (optional)
Place a spoonful of creme fraiche in the middle of a flour wrap. Add a few spoonfuls of the chicken and vegetables on top of the creme fraiche. Not too much. Fold one half of the wrap over, put a little bit of creme fraiche on top and then fold the other half of the wrap over so that it sticks onto the creme fraiche. Fold one end of the wrap up and stick it down with a bit of creme fraiche.
Eat your wrap from the open end.
These are quite messy to eat but very tasty 😊
Repeat the process for each person and for as many wraps you wish to eat. I usually find two wraps are quite filling.

A thrill of
anticipation filled her. She was going to do this.
Tammy picked up
her cell phone, called her best friend and waited impatiently for Cheryl to

a drink and get him to drink it. Then he should be open to my suggestions about
what I want him to wear and we’ll come to your Halloween party in our

Tammy hung up
and looked at the ingredients dubiously. Some of them did look quite gross,
like the dried lizard’s foot. “How the hell am I supposed to get James to drink
all this?” And she felt a bit guilty.
James thought that fancy dress was optional for the party. He had no idea he
was going to be drinking a disgusting potion and that his girlfriend was going
to be putting a spell on him so that he would have no choice but to wear a

Gathering up the
ingredients, she went downstairs to her kitchen. The spell book didn’t say you
couldn’t blend them. It had merely stated that they needed mixing together.
Tammy put them all into the blender and watched as the ingredients turned into
a frothy caramel coloured mess. “Urgh, gross, but at least it looks like one of
those health shake things he drinks.” She turned the blender off. Tammy smelled
it as she took the jug out and was amazed it didn’t smell disgusting like she
was expecting it to. “It even smells like one of his shakes.”
for once one of her forays into magic seemed to be working, Tammy poured the
potion into a pint glass and put it in the fridge.
