I’m making tons of Christmas coquito this month. Coquito is a Puerto Rican eggnog made with coconut milk. It’s easy and delicious. You can find the coconut milk in the Asian foods section of the supermarket.
1 can evaporated milk
1 can condensed milk
I can coconut milk (not coconut water!)
1 cup of spiced rum
1 teaspoonful vanilla
All you have to do is pour all the ingredients together into a jar and shake well.
Then you leave it in the fridge for a day to let the flavors mix well. It’s light and delicious and keeps for up to a week in the refrigerator. I make dozens of bottles during Christmas and give it away as presents.
