In the Kitchen with Tobie Easton #Fantasy #Mermaids


Hi, all!  Since my book series, the Mer Chronicles, features a community of Mermaids living in secret on land in Malibu, California, I thought I’d share a recipe with you that couldn’t be more classic California…avocado toast!

I’m pretty addicted to avocado toast because it’s soooo delicious while also healthy, filling, and really quick (I eat A LOT of it when I have a writing deadline and no time to cook!).
The best part of avocado toast is experimenting to find your perfect combo of toppings and spices; I’ll be sharing my favorites today but feel free to mix it up and experiment until you land on your personal fave.

- First, choose a great bread.  If I’m eating this on a weekday and maximizing the healthy factor, I go with sliced whole wheat or Ezekiel, but if I’m doing a more decadent version on the weekends, I’ll choose a crusty artisan loaf when I’m at the market.  

- Next, toast the bread.  While it’s toasting, prepare everything else so you have it ready to go while the bread is still warm.  Slice one avocado, cut a lemon in half so it’s ready to squeeze, and get out your olive oil and spices.  I like garlic salt, rosemary, a little bit of thyme (my dad’s recommendation—he’s a chef, and he was so right), and an even littler bit of cayenne pepper (I’m a total wimp when it comes to spice but just a dash really amps this dish up).  I also love chopped red onions on this, so if you want to add those, chop them now.  Halved cherry tomatoes can be good here, too, and/or sprouts if you’re in that kind of mood.

- Once you have two slices of toasted bread, mash half a sliced avocado onto each slice with a fork.  Then add your spices (listed above) to taste and any extras like your chopped onion, cherry tomatoes, and/or sprouts.  Squeeze a little lemon and drizzle a little olive oil.  Be careful not to overdo it so your bread doesn’t get soggy.  I LOVE Trader Joe’s garlic olive oil, but any olive oil you like will be great here.

- As a last step, if you’re using sliced, square bread, it’s fun to cut it in quarters—it’s pretty and it makes your toast last longer :) 

And that’s it!  Super easy and delicious.  Enjoy while reading, writing, or pretending you’re on a beach in a jewel-toned Mermaid’s tail!

I wish Clay were here to see this. The thought flits through my mind again and again. When my family and I swim through the sparkling entrance of the palace, I wish I could grab his hand. As we’re greeted by hundreds of nobles swishing their tails in applause, I imagine the excited words he’d whisper in my ear. And as we start down the center aisle toward the thrones at the other end of the cavernous chamber, I yearn to show him how beautifully this room has been restored since he and I were last here.

Approaching the thrones, we process over an exquisite mosaic made up of abalone, mother of pearl, and troca shell pieces. It takes everything in me to keep my face neutral, to keep my head lifted and my sunbeam crown upright. This is the spot where, not so long ago, Clay risked his life to save mine. I glance around me at the splendor and the celebration. Clay’s sacrifice made today possible, and he’s not even here to see it.
