One of my favorite recipes is my great-grandmother’s chicken noodle soup.
This is a slapped-together recipe and never comes out exactly the same twice, but it is always delicious.
Stock:
A whole chicken or four chicken legs
Onion
Celery
Carrots
Garlic
(left over scraps is perfect for making stock. Keep a scrap freezer bag in your freezer for months and then pull it out when making stock)
~ Put in pot and fill with water until everything is covered in water.
~ Boil for 4-12 hours adding water as needed
~ Remove chicken and put into a bowl and set aside.
~ Strain out rest of ingredients.
Nana’s Chicken Noodle Soup
6-8 cups of stock (see above)
Left over chicken from stock or dinner
4-6 chocked carrots, inch thick
4-6 stalks chocked celery
1 chocked yellow onion
4-6 cloves of garlic, minced or use a garlic press
1 can diced tomatoes
1-2 Tablespoons Parsley, Bails, Oregano, Garlic powder
Salt and Pepper to taste
5-8 bouillon cubes, chicken
Water
1 Bag frozen Peas
Alphabetic noodles
~ Place all ingredients up to salt and pepper into pot, then fill the remaining space in pot with water to the top.
~ Place in 6 bouillon cubes to start.
~ Light simmer for two hours or boil for 30mins-1hr, or until vegetables are soft.
~ Remove chicken from bones and cut into cubes or shred (depending on how you like it)
~ Add peas then boil.
~ Taste soup and add more bouillon, salt, pepper, or any other ingredients you desire to taste.
~ Boil noodles as the box instructs to al dente.
~ Strain noodles and put them back into the pot. Spoon some broth of soup onto noodles to keep them wet.
~ fill bowls with noodles and soup. Enjoy with fresh shredded romano cheese on top.
